We created this ready-to-eat Coppa using our Saddleback woodland-reared pork.
We added toasted coriander, black pepper to the collars before curing and ageing for four months.
This can be eaten straight from the pack but it's also great on pizzas or in salads.

Our Pork
Our pork was raised by us in the heart of the South Downs National Park. A pig’s natural habitat is woodland and at Slow Grown Farm, our rare-breed pigs live in 10 acres of woodland where they forage for insects, nuts and plants. Our pig’s diet is supplemented with organic soy-free pig feed and the whey from our cheesemaking.
