Skirt has a thick grain and lots of beefy flavour. It's not the most tender cut, so is best cooked hot and quick. Our favourite way to cook this steak is quickly on a hot BBQ, then sliced thinly against the grain to serve. A great cut to try marinating.

Available in individual and sharing sizes.

Sold frozen ready to go into your freezer at home or defrost in the fridge.

Our Beef

Our beef was raised by us at Lavington Estate in Graffham, in the heart of the South Downs National Park.

Our rare-breed cattle's diet is comprised entirely of the wide variety of grasses and wildflowers they graze, plus the hedgerows and trees they browse.

By ranging the estate, with careful management, our cattle help to restore a woodland pasture setting. This creates more habitat, thereby helping to increase biodiversity.


100% Grass-Fed Beef

Cooking Instructions

Remove from the packaging, pat dry to remove excess moisture and allow to come up to room temperature.
Season generously with salt and pepper and rub with a little oil or animal fat. Pre-heat a frying pan or griddle until it's smoking hot.
Over high heat, cook the steak on one side before turning over once it has browned nicely.
Cook for 3-4 minutes each side for medium-rare.
Take off the heat and allow to rest for at least 5-10 minutes.
Slice thinly against the grain.
