Our Beef

Our beef was raised by us at Lavington Estate in Graffham, in the heart of the South Downs National Park.

Our rare-breed cattle's diet is comprised entirely of the wide variety of grasses and wildflowers they graze, plus the hedgerows and trees they browse.

By ranging the estate, with careful management, our cattle help to restore a woodland pasture setting. This creates more habitat, thereby helping to increase biodiversity.

Cooking Instructions

Allow to defrost thoroughly before cooking.
Best cooked medium or medium-rare as it can be a little chewy if rare.
Remove from the packaging, pat dry to remove excess moisture and allow to come up to room temperature.
Season with salt and rub with a little oil or animal fat. Pre-heat a frying pan or griddle until it's smoking hot.
Over high heat, cook the steak on one side before turning over once it has browned nicely. If you want to add butter/garlic/herbs, now is the time. Use the butter to baste the steak while it cooks on the second side.
2-2.5 minutes each side for a rare steak, 3-4 minutes each side for medium, 5-6 minutes for well done.
Take off the heat and allow to rest for at least 5-10 minutes.
If you want to add pepper now is the time - adding before cooking means it can burn in the hot pan.
