Our Beef

Our beef was raised by us at Lavington Estate in Graffham, in the heart of the South Downs National Park.

Our rare-breed cattle's diet is comprised entirely of the wide variety of grasses and wildflowers they graze, plus the hedgerows and trees they browse.

By ranging the estate, with careful management, our cattle help to restore a woodland pasture setting. This creates more habitat, thereby helping to increase biodiversity.

Ingredients

100% Grass-Fed Beef

Cooking Instructions

Remove from the packaging and allow to come up to room temperature.
Season generously with salt and pepper and rub with a little oil or animal fat.
We love to sear our beef joints on the hob in a hot cast iron pan first, before roasting in the oven - or you could sear in the roasting pan itself.
Rest the beef on a trivet of chopped celery, carrot and onion, adding a bay leaf, garlic and herbs if you like.
Roast in an oven preheated to 180°C for:
- 20 minutes per 500g plus 20 minutes (for rare)
- 25 minutes per 500g plus 20 minutes (for medium)
- 30 minutes per 500g plus 20 minutes (for well-done).
If you have a meat thermometer, your silverside will be cooked rare when the internal temperature reaches 55°C.
Leave to rest for 20 minutes out of the oven before carving.
