An indulgent eating experience! With a beautiful, delicate flavour, our rare-breed chateaubriands are cut from the top section of the fillet. We recommend this is cooked rare to medium.

Sold frozen ready to go into your freezer at home or defrost in the fridge.

Our Beef

Our beef was raised by us at Lavington Estate in Graffham, in the heart of the South Downs National Park.

Our rare-breed cattle's diet is comprised entirely of the wide variety of grasses and wildflowers they graze, plus the hedgerows and trees they browse.

By ranging the estate, with careful management, our cattle help to restore a woodland pasture setting. This creates more habitat, thereby helping to increase biodiversity.

100% Grass-Fed Beef

Cooking Instructions

Remove from the packaging, pat dry to remove excess moisture and allow to come up to room temperature.
Season with salt and rub with a little oil or animal fat.
Pre-heat the oven to 230°C/fan 210°C/gas 8 and heat an oven-proof frying pan or griddle until it's smoking hot.
Over high heat, sear the joint all over until browned nicely (5-6 minutes total).
Add a tablespoon of butter to the pan and baste the joint with it.
Transfer the pan to the pre-heated oven for 12-14 minutes, you're looking for an internal temperature of 53°C.
Remove from the oven and allow to rest for 10-15 minutes before carving into 1/2" slices to serve.
